The mechanics are finicky, think of it as a high risk high reward mechanic. You're either successful and deal big damage or you get unlucky and potentially receive big damage. Just keep practicing. They are finicky and you are bad. But thats no problem. You just gotta learn how to do it.
Backstabs are the easiest thing to do in the game due to reverse rolls. They've been around since dark souls 1 and they're extremely broken. Reply

Seems that theres no longer the need to two hand a weapon after every shield parry.
